How To Make Crumble From Scratch

Making crumble from scratch is quick and easy. Using a large mixing bowl, combine the dry ingredients, toss the grated butter over it, and stir in the egg yolks until you get a clumpy sandy mixture.  You can also use a blender or food processor to make the crumble. If using this method, cut the butter into small cubes and add it in small batches to the flour mixture, pulsing as you go.



How To Prepare Mixed Berry Filling

If you're using a frozen berry mix, don't forget to thaw it first before baking. In a medium bowl, combine all the berry filling ingredients, toss everything together until sugar is fully dissolved and everything is combined.



How To Assemble Skillet Mixed Berry Crumble

Assembling this warm dessert is very easy! First, pour some of the crumble mixture and press lightly into the cast iron skillet; leave some for the crumble topping.  Pour and spread the mixed berry filling evenly and top with the remaining crumble. Serve warm with some ice cream or whipped cream.

Crumble:
  • All-Purpose Flour - you can easily substitute the flour for a gluten-free option by using a gluten-free flour or oat flour.
  • Baking Powder - this helps the crumble be more fluffy and tender.
  • Granulated Sugar - aside from adding sweetness and texture to the crumb mix, sugar also helps caramelization. You can also use brown sugar; its caramel-like flavor goes well with all the components of this dessert recipe. You will be using granulated sugar for both the crumble mix and berry filling.
  • Butter - using frozen butter is essential as it will help the flour stick better, making a crumblier texture that we all love in a cobbler. If using unsalted butter, don't forget to add a pinch of salt to the dry ingredients mix.
  • Egg Yolks - acts as a binder and helps add moisture, giving more volume to the crumb.
Mixed Berry Filling:
  • Fresh Berries - feel free to use your favorite berries.  We used strawberries, raspberries, and blueberries berry mix. We sure recommend that you use fresh berries, but you can also use a bag of frozen berries, just thaw it overnight before using.
  • Lemon - adds a fabulous bright and vibrant flavor, especially on the mixed berries. You can also add some of the lemon zest and not just its juice.
  • Cornstarch - adding cornstarch is just to thicken the berry filling.
  • Ground Cinnamon - a touch of cinnamon spice can bring a lot of warm and comforting flavors that go well with this skillet berry crumble recipe.


Tips & Suggestions

  • This cast iron dessert is already great on its own but definitely can taste better when served with some vanilla ice cream or a dollop of whipped cream or even both!
  • If you’re making this ahead of time, you should use a baking dish instead of a skillet since it is not recommended to put a cast-iron skillet in the fridge.

Cooking Instructions

Preheat the oven to 375 degrees F (190 degrees C)

In a large mixing bowl, combine the Fresh Mixed Berries (4 cups), Granulated Sugar (4 Tbsp), 1 Tbsp Lemon Juice (1), Corn Starch (1 Tbsp), and Ground Cinnamon (1/2 tsp). Stir until the sugar is mostly dissolved, then set aside.

In another large bowl, combine the All-Purpose Flour (1 1/2 cups), Granulated Sugar (1/2 cup), and Baking Powder (1/2 tsp).

Grate the Salted Butter (1/2 cup) into the flour mixture, making sure to toss flour over the pieces as you go so they don’t stick together.

Stir in the Egg Yolks (2). Once it has been absorbed, use your fingers to fully incorporate the ingredients. When you press the mixture together, it should form into small clumps.

Press around half the mixture into a cast-iron skillet or other oven-safe dish. Top with the berry filling, then crumble the remaining mixture over the top.

Bake for 20-30 minutes. The top should be light golden brown, and the filling bubbling gently along the sides.
