Preheat the oven to 350°F. Rinse the Yukon Gold Potatoes (3 cups) in cold running water for 10-15 minutes, then drain thoroughly.

Whisk the Extra-Virgin Olive Oil (4 Tbsp), juice from the Lemon (1/2), and Kosher Salt (2 tsp) together, then add the potatoes, Garlic (6 cloves), and Bay Leaves (2) and toss to coat. Transfer to a roasting tin and pour the Water (3/4 cup) into the gaps between the potatoes.
