In a medium saucepan over medium heat, combine 1 cup Granulated Sugar (1 cup) and the Water (1 cup). Bring to a boil, then reduce the heat to medium-low.

Add the Oranges (2) slices to the saucepan and let them simmer for 15 minutes. Remove from heat and set aside.

Preheat your oven to 350°F (175°C). Prepare a 9-inch round cake pan by lightly greasing it and lining the bottom with parchment paper.

In a medium bowl, whisk together the All-Purpose Flour (1 1/2 cups), Baking Powder (1 tsp), Baking Soda (1/2 tsp), and Salt (1 tsp). Set aside.

In a large mixing bowl, whisk together the Ricotta Cheese (1 cup), Olive Oil (1/3 cup), remaining 1 cup Granulated Sugar (1 cup), Vanilla Extract (2 tsp), and Orange (1 Tbsp) zest until smooth.

Add the Large Eggs (2) one at a time, whisking until fully incorporated after each addition.

Gently fold the dry ingredients into the wet mixture until just combined, careful not to overmix.

Arrange the syrupy orange slices on the bottom of the prepared cake pan setting the leftover syrup aside.

Gently pour the cake batter into the pan, spreading it evenly over the orange slices.

Bake for 30-45 minutes, or until a cake tester or skewer inserted into the center comes out clean.

Allow the cake to cool in the pan for at least 10 minutes. Run a knife around the edges, then carefully invert the cake onto a serving plate.
