In a large skillet over medium heat, add the Ghee (1 Tbsp), Pav Bhaji Masala (1 tsp), and Kashmiri Red Chili Powder (1/2 tsp). Cook until fragrant, about 1 minute. Add the Red Onion (1), Green Chili Peppers (3), and Ginger Garlic Paste (2 tsp), and sauté until tender, about 4 minutes.

Add the Tomatoes (2) and Red Bell Pepper (1) and cook until softened and the tomatoes begin to break down, about 10 minutes. Add the Mashed Potatoes (1/3 cup), Cauliflower (1/3 cup), Green Peas (1/3 cup), and season with Salt (2 tsp). Continue cooking until the mixture comes together, about 10 minutes. Finish with Fresh Cilantro (2 Tbsp) and juice from the Lemon (1).

Slice the Dinner Rolls (12) horizontally and lightly spread Ghee (as needed) on the cut sides. Toast them in a pan over medium heat until golden.

Scoop the masala over the buns and top with Red Onions (to taste) and chopped Fresh Cilantro (to taste). Sprinkle the Chaat Masala (to taste) and finish with a squeeze of Lemons (to taste) juice.
