In a large skillet over medium high heat combine the Olive Oil (2 Tbsp) and Unsalted Butter (3 Tbsp). Once the butter is melted, add the Onions (6 cups), Kosher Salt (1 tsp), and Freshly Ground Black Pepper (1/2 tsp). Cook, stirring occasionally, until they begin to turn a deep amber color, about 30 minutes.

Once the onions are completely caramelized, add the White Wine (1/2 cup), Sherry Wine (1 Tbsp), Vegetable Base (1 Tbsp), Bay Leaf (1), and Fresh Thyme (1 sprig). Bring the mixture to a boil and continue cooking until the liquid has reduced by ¾.

Heat a large skillet over medium heat. Spread the Unsalted Butter (1/2 cup) evenly across the slices of Sourdough Bread (8 slices).

Layer the onion marmalade across 4 bread slices and top with the Gruyère Cheese (2 cups). Place the remaining pieces of bread on top of the cheese.
