Preheat your oven to 350℉.

Place a large oven-safe pot over medium heat. Add the Whole Cloves (3), Green Cardamom Pods (2), Vanilla Bean Pod (1), and Cinnamon Stick (1) and toast until fragrant, about 2 minutes. Add the Coconut Milk (1 1/2 cups), Whole Milk (1 1/2 cups), Heavy Cream (3/4 cup), and Granulated Sugar (2 Tbsp). Bring the mixture to a simmer and stir in the Short Grain White Rice (1 cup) and Lime (1). Bring the mixture back to a simmer and let cook until the rice begins to become tender and the cream begins to thicken, about 5 minutes.

Whisk together the yolks from the Eggs (2) and Mascarpone Cheese (2 Tbsp) until smooth. Remove the rice from the heat and gently fold in the mascarpone. Remove the cloves, cardamom, vanilla, and cinnamon from the pot and place in the oven. Bake until the rice is completely cooked, about 15 minutes.
