Preheat your oven to 350℉.

In a large mixing bowl combine the Salted Butter (1 cup) and Granulated Sugar (3/4 cup). Using an electric hand mixer, beat until light and fluffy, about 3 minutes. Add the Large Egg (1) and seeds from the Vanilla Bean Pod (1) and mix until smooth, about 1 minute.

Sift in the All-Purpose Flour (2 cups), Corn Starch (3/4 cup), and Baking Powder (1/2 tsp), and use a rubber spatula to bring the mixture together.

Divide the dough into 16 pieces. Roll each piece of dough into a ball and gently press into a disc. Place on a parchment lined sheet tray and chill for 10 minutes.

Bake until the cookies turn a pale golden color, about 10 minutes. Let the cookies cool completely.

Place 1 tablespoon of Dulce de Leche (3/4 cup) on the flat side of half the cookies. Sandwich the other half of the cookies on top of the dulce de leche. Finish with a dusting of Powdered Confectioners Sugar (to taste).
