Preheat the oven to 400°F (200°C).

In a medium bowl, mix together the Cream Cheese (1/2 cup), Powdered Confectioners Sugar (3 Tbsp), Lemon Juice (1 tsp), Kosher Salt (as needed), and Vanilla Extract (as needed) until smooth.

Lightly dust your countertop and rolling pin with All-Purpose Flour (as needed). Roll out the Puff Pastry (1 sheet) slightly to extend it and make into a square.

Cut the puff pastry into 8 equal squares. Transfer the squares to a muffin tin, pressing them gently into the wells while leaving the corners hanging out.

Brush the exposed edges of the puff pastry with Egg (1) and sprinkle with Raw Cane Sugar (to taste).

Evenly divide the cream cheese mixture among the puff pastry squares, spreading it gently with a spoon.
