Preheat your oven to 300℉.

Place a large skillet over medium heat. Add the Olive Oil (2 Tbsp) Yellow Onion (1) and Garlic (2 cloves) and cook until onion has softened and begins to caramelize, about 5 minutes. Add the Dark Brown Sugar (1/2 cup) Fennel Seeds (1 tsp) and Chili Pepper (1/2 tsp) and cook until the sugar has melted, about 2 minutes. Add the Ketchup (2 1/2 cups) and Dark Soy Sauce (1/2 cup) and stir to combine. Bring the mixture to a boil, then reduce the heat to a simmer and continue cooking until the sauce begins to thicken, about 10 minutes.

Place the Pork Ribs (2 lb) on an aluminum lined baking sheet and season liberally with Kosher Salt (1 pinch) and Ground Black Pepper (1 pinch) Pour the sauce over the ribs to coat completely. Cover the tray with foil and roast until the meat starts to become tender, about 2 hours. Increase the oven temperature to 350℉, remove the top foil and continue cooking until the ribs have caramelized and the meat can easily be pulled from the bone, about 45 minutes.
