Make the chutney: Using a mortar and pestle or food processor, grind the Jalapeño Peppers (5), Roasted Peanuts (4 Tbsp), Garlic (3 cloves), Fresh Ginger (1/2 in), Cumin Seeds (1 tsp), and Ground Turmeric (1/4 tsp) until the mixture becomes a coarse paste. Add the Fresh Cilantro (2 bunches) and continue grinding until the leaves and soft stems turn into a paste. Taste and adjust for seasoning with Kosher Salt (to taste). Finish with the juice of 1 Lime (1).

Assemble the sandwich: Spread a thin layer of Salted Butter (4 Tbsp) a thin layer of chutney on each slice of bread.

Layer 1 slice of White Bread (6 slices) with Tomatoes (2), Cucumber (1), Red Onion (1) and season with Kosher Salt (to taste), Freshly Ground Black Pepper (to taste), and Chaat Masala (to taste). Place another piece of bread on top and layer with Potato (1 lb) and American Cheese (to taste) Finish with freshly squeezed Lime Juice (to taste) and top with the remaining pieces of bread, chutney side down.

Place a skillet over medium heat and cook the sandwich until golden on both sides and the cheese is completely melted.
