step 1
Preheat the oven to 375°F and line baking sheets with parchment paper.
step 2
In a stand mixer fitted with the paddle attachment, cream together the Unsalted Butter (3/4 cup), Dark Brown Sugar (1 cup), and Granulated Sugar (4 Tbsp) until light and fluffy.
step 3
Add the Egg (1), Eggs (2), and Vanilla Extract (1 tsp), beating until fully combined.
step 4
In a separate bowl, whisk together the All-Purpose Flour (1 1/2 cups), Baking Soda (1 tsp) and Kosher Salt (1 tsp).
step 5
Gradually add the dry ingredients to the wet mixture, mixing just until combined.
step 6
Fold in 6 oz of the coarsely chopped Candy (1 1/4 cups) ensuring it’s evenly distributed throughout the dough.
step 7
Scoop 3 tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Place the remaining candy on top of the balls. Let chill in the fridge for at least 30 minutes.
step 8
Bake for 10-12 minutes, or until the edges are golden and the middle is set.
step 9
Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
