Roast the squash: Preheat your oven to 425℉. In a small mixing bowl whisk together the White Miso Paste (1 Tbsp), Water (1 Tbsp), Olive Oil (1 Tbsp) and Aleppo Chili Flakes (1/2 tsp). Cover the cut side of the Butternut Squash (3 cups) completely with the miso mixture and place on an aluminum lined baking sheet, cut side down. Roast until caramelized and tender, about 20 minutes. Once cool enough to touch, slice into ½-inch slices.

Make the caramelized onions: In a large skillet over medium heat, melt the Unsalted Butter (1 stick). Add the Yellow Onions (3) and Kosher Salt (2 tsp) and toss to coat completely. Cook the onions until they turn a deep golden brown, about 20 minutes.

Assemble: Spread the Unsalted Butter (4 Tbsp) evenly across the slices of Sourdough Bread (4 slices). Place a large skillet over medium heat. Place the bread, butter side down on the skillet. Layer the White Cheddar Cheese (4 slices) on the bread and top with squash and caramelized onions. Cook until the bread is golden and the cheese is melted.
