Make the viet sauce: In a mixing bowl, combine the Fish Sauce (3/4 cup), Granulated Sugar (4 Tbsp), Rice Wine (4 Tbsp), Red Fresno Chili Peppers (2), Garlic (2 cloves), Scallion (1 bunch) whites, Fresh Cilantro (1/2 bunch), and Fresh Mint (1/2 bunch).

Prepare the filling: In a large mixing bowl, combine the Vermicelli Noodles (8 oz), Shrimp (1 lb), Little Gems Lettuce (1 cup), Scallion Greens, Carrot (1), Fresh Thai Basil (1 bunch), Fresh Mint (1/2 bunch), Fresh Cilantro (1/2 bunch), Lime (1), and juice and ¼ cup of the viet sauce.

Assemble: Place ¼ cup of filling in the middle of a rehydrated Rice Paper Wrapper (1) round. Fold the edges over the filling and roll until the filling is covered completely. Repeat with the remaining filling and rice paper rounds.
