Cooking InstructionsHide images
step 1
Rinse the Beef Short Ribs (3 lb) under cold water thoroughly until the water runs clear. Pat dry with paper towels and set aside.
step 2
In a food processor, combine Yellow Onion (1/2), Korean Pear (1), Garlic (6 cloves), Fresh Ginger (1 in) and Water (1/2 cup). Process until smooth.
step 3
Transfer the marinade to a large bowl. Add Brown Sugar (4 Tbsp), Soy Sauce (1/2 cup), Mirin (4 Tbsp), Sesame Oil (2 Tbsp), and Finely Ground Black Pepper (as needed). Whisk until well combined.
step 4
Place the beef ribs in the marinade, ensuring they are fully coated. Cover and refrigerate for at least 6 hours, preferably overnight, for optimal flavor. You can marinate your short ribs for 3-4 days refrigerated.
step 5
When ready to cook, preheat your grill, broiler, or pan over medium-high heat. Cook the ribs hot and fast on each side until caramelized and cooked to your desired doneness.
step 6
Garnish the ribs with Sesame Seeds (1 tsp) and sliced Scallions (3) before serving.
step 7
Serve hot with your favorite sides, such as Jasmine Rice (to taste), Cucumbers (to taste), Kimchi (to taste) and/or Pickled Daikon Radish (to taste).
