Preheat the oven to 400°F.

Temper and season the steak: Season the New York Strip Steak (1) with Sea Salt Flakes (1 Tbsp) and temper for 1 hour.

Combine the equal quantities of Crushed Red Pepper Flakes (1 Tbsp) and salt into a spice grinder and grind until fine. Set aside for later.

For cauliflower: Cut the Purple Cauliflower (1 head) into small florets and coat in Olive Oil (2 Tbsp) in a mixing bowl.

Add Ground Allspice (1/2 tsp), Ground Cloves (1/4 tsp), Ground Cumin (1/2 tsp), Salt (1 Tbsp), and Ground Black Pepper (1 tsp) until fully coated.

Place on a sheet tray in the oven for 15 minutes until fully cooked.

For the onion petals: Heat the Grapeseed Oil (4 Tbsp) in a pan over a high heat and add the Red Onion (1) quarters cut-side down.

Cover the pan and cook for 10 minutes.

Remove the lid and pour the Brandy (2 Tbsp) over the onion to flambé. Once the flames have subsided, set aside and allow to cool.

When cooled, separate the onion layers into individual petals and set aside.

For the crispy Iberico ham: Lay the Iberico Ham (2 slices) between two sheet trays, pressing down firmly. Place in the oven until crispy.

Cook the steak: In a hot cast iron pan, add oil.

Pat the NY strip dry and sear on all sides in the pan.

Add Butter (2 Tbsp), Cinnamon Stick (1), and Fresh Ginger (1 in) and baste the steak whilst cooking. Cook to medium rare (or desired temperature) and remove from the pan and let rest.

For the sauce: In a hot pan, add Grapeseed Oil (1 Tbsp).

Add White Onion (1/2), Garlic (1 clove), and Fresh Ginger (1 in) and cook down before pouring in Chicken Stock (4 Tbsp), and Granulated Sugar (1 Tbsp).

Reduce for 10 minutes before removing from the heat and adding cold Butter (4 oz).

Blend with an immersion blender until smooth and season with Salt (to taste) and Ground Black Pepper (to taste) to taste.

To assemble: Slice the rested steak and season with reserved chili salt.

Take an onion petal and place in the middle of the serving plate.

Pour the sauce into the onion petal and place the sliced steak and cauliflower around the outside.

Crumble over the crispy Iberico ham to serve.
