Make the sauce: In a large mixing bowl, whisk together the Gochujang (4 Tbsp), Honey (2 Tbsp), Mirin (2 Tbsp), Soy Sauce (1 Tbsp), Apple Cider Vinegar (1 Tbsp), Sesame Oil (2 tsp), and Garlic (1 clove). Set aside until ready to use.

Prepare the chicken: Heat the Neutral Oil (8 cups) in a large pot over medium high heat until it reaches a temperature of 350℉. In a large mixing bowl whisk together the Corn Starch (1 cup) and All-Purpose Flour (1 cup). Gently whisk in the Sparkling Water (1 cup) until a thick batter forms. Dip the Boneless, Skinless Chicken Thigh (1 lb) into the batter to coat completely and place carefully in the oil to fry until golden brown and crispy. Remove the chicken to a wire rack set over a sheet tray to drain any excess oil.

Toss the fried chicken in the gochujang sauce to coat completely. Plate the chicken and garnish with Scallion (1 pinch) and Black Sesame Seeds (1 pinch).
