Make the spice rub: In a mixing bowl, combine Ground Coffee (2 Tbsp), Smoked Paprika (1 Tbsp), Ground Cumin (1 Tbsp), Simply Organic Garlic Powder (sponsored) (1 tsp), Cayenne Pepper (1 tsp), Yellow Mustard Seeds (1 Tbsp), Brown Sugar (1 tsp), Salt (1 Tbsp), Ground Black Pepper (1 tsp) Whisk together so it’s all evenly mixed.

Cook the ribeye: Heat a large cast iron skillet over high heat.

Cover the Bone-in Ribeye Steak (1 lb) with the Spice Rub and push it firmly on the meat so it’s completely covered by the steak rub.

Once the pan is smoking hot, add Olive Oil (2 Tbsp)

Once the pan is smoking hot, add Olive Oil (1 Tbsp). Carefully lay the steak in the pan and sear so there is a nice crust.

Add the Yellow Onion (1) and Garlic (5 cloves) to the pan with the steak. Let the fat render from the steak, and push the onions and garlic to the sides of the pan to cook in the fat.

Add about Unsalted Butter (4 Tbsp) to the sides of the pan with the onions and garlic.

Once the steak has a nice crust and is browned on one side, flip and cook the other side of the steak. Be sure to sear the sides of the steak as well.

Meanwhile, cook the Eggs (2) In a separate nonstick skillet over medium heat, add about Olive Oil (1 tablespoon)

Once hot, gently crack the eggs into the skillet and season with Kosher Salt (to taste) and Cracked Black Pepper (to taste)

Add another Unsalted Butter (3 Tbsp) to the egg pan and add desired amount of Scallion (1 bunch)

Remove pan from the pan when the egg whites are firm and yolks are still runny.

Cover the eggs with a half the chopped Fresh Cilantro (1 bunch)

Once the steak has finished cooking to medium rare, squeeze the Lime (1) the steak and remove from heat.

Transfer the steak to a sheet pan lined with a resting rack, then pour the onion mixture all over the steak.

Cover the steak with remaining chopped cilantro and green onion.

Trim the bone from the steak and reserve, and slice the remaining rib eye into thin slices and fan the slices out over the onion mixture.

Finish with Sea Salt Flakes (to taste) and Cracked Black Pepper (to taste)

Use a large spoon to lift each fried egg onto the steak slices.
