Make the wonton chips: Heat your Neutral Oil (as needed) to 350℉. Place the Wonton Wrappers (as needed) into the oil and cook until they are golden brown and crisp, about 2 minutes.

Remove the chips to a sheet tray with a resting rack and season with Furikake (to taste).

Marinate the poke: In a large mixing bowl, combine the Sushi Grade Ahi Tuna (1 lb), Soy Sauce (4 Tbsp), Toasted Sesame Oil (1 Tbsp), Toasted White Sesame Seeds (2 tsp), Shelled Edamame (1/2 cup), Korean Chili Powder (1 tsp), White Onion (1), and Freshly Ground Black Pepper (to taste). Toss to combine and set aside.

Make the aioli: In a small mixing bowl, combine the Japanese Kewpie Mayonnaise (1/2 cup) and Sriracha (1/2 cup).

Build your poke nachos: Plate the wonton chips on the bottom of a serving plate.

Top with the poke, spicy aioli, Scallions (to taste), Cucumbers (to taste), Jalapeño Peppers (to taste), Avocados (to taste), Fried Shallots (to taste), Fresh Cilantro Leaves (to taste), Pickled Ginger (to taste), and Limes (to taste) wedges.
