Preheat your oven to 350℉.

Cook potatoes: Pierce the Russet Potatoes (2) with a fork all over the potatoes. Next coat the potatoes with Olive Oil (2 Tbsp) and Salt (2 Tbsp) then wrap them with foil. Bake in the oven for an hour or until tender.

Cook the beef: Season the 80/20 Lean Ground Beef (1 lb) with Ground Cumin (2 Tbsp), Smoked Paprika (2 Tbsp), Kosher Salt (2 Tbsp), Ground Cinnamon (1 Tbsp), and Freshly Ground Black Pepper (1 Tbsp). Place the beef on a baking sheet and press down gently to flatten across the pan evenly. Bake until the beef has browned and caramelized, about 20 minutes.

While the beef bakes, heat a medium sized pot over high heat and add Grapeseed Oil (2 Tbsp). When oil is hot, add Yellow Onion (1) to saute.

Cook until the onion begins to caramelize and season with Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste).

To the pot, add the Garlic (4 cloves), Dried Oregano (2 tsp), Ground Cumin (2 tsp), and Chili Powder (2 tsp).

Let the mixture cook until the garlic is fragrant, then add the Tomato Paste (1 tsp) and toast for 1 minute.

Add the Demerara Sugar (2 tsp) and cook until it has dissolved, then add the Crushed Tomatoes (1 can) and Black Beans (1 can).

Remove the beef from the oven and add to the pot.

Pour in the Chicken Stock (1 cup) and bring to a simmer. Add the Scallion (1 bunch) and grate in the 70% Dark Chocolate (2 2/3 Tbsp) and taste for seasoning.

When chocolate is melted, remove from the heat.

Assembly: Split the baked potatoes open and divide the chili between them.

Top with Sour Cream (4 Tbsp), the Scallion (1 bunch) whites, and Shredded Cheddar Cheese (1/2 cup).

Grate the 70% Dark Chocolate (2 2/3 Tbsp) over the top and finish with a drizzle of Olive Oil (to taste).
