Make the fried rice: In a large skillet over medium heat, add the Grapeseed Oil (2 Tbsp). Once the oil is shimmering, add the Red Fresno Chili Pepper (1) and Chinese Sausages (4 oz).

Grate the Garlic (2 cloves) and Fresh Ginger (1 in) into the pan and stir to combine. Let the mixture cook until the sausage just begins to caramelize.

Move the aromatics to one side of the pan. Add the White Rice (2 cups) to the open space and gently flatten to fill the pan. Increase the heat to medium high.

Let the rice cook until it begins to pop, then drizzle in the Soy Sauce (2 Tbsp), Sesame Oil (1 Tbsp), and Fish Sauce (2 tsp).

Add the Kimchi (1/2 cup) and mix everything together, quickly shaking the pan to make sure everything is well incorporated.

Fry the egg: In a small skillet over medium high heat, add the Grapeseed Oil (1 Tbsp).

Once the oil is shimmering, add the Eggs (2) and season with Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste). Let the egg fry until the whites are set but yolk is runny.

Add ½ of the Scallion (1/2 bunch) to the rice and toss to combine.

Plate the rice with the egg on top and finish with the remaining Scallion (1/2 bunch).
